    Consuming raw, dark leafy greens as part of salad has become very fashionable; however, when eating to support your thyroid health it’s essential that certain uncooked greens be avoided.

    Goitrogenic and cruciferous vegetables may hinder the thyroid’s ability to utilize iodine, making thyroid hormone production much harder, leading to hypothyroidism, goiter, cysts or nodules if consumed regularly.

    However, cooking can help lower goitrogens considerably; thus it is still safe and delicious to enjoy them when prepared properly! Boiling and steaming are excellent techniques for decreasing goitrogen levels; these two techniques should provide greater results in terms of goitrogenic reduction than eating uncooked.

    Here is a short list of uncooked goitrogenic and cruciferous greens you should avoid (and only consume when prepared properly):
    Kale, Mustard Greens, Broccoli, Brussels Sprouts, Cauliflower, Bok Choy Cabbage Rutabaga Turnips are examples.

    Honey Mustard Chicken Salad With Tomatoes And Avocado

    Honey mustard dressing can be quickly made, and I prefer keeping some in a mason jar throughout the week for quick dressing needs or for dipping raw greens like carrots or celery into it.

    This salad would taste just as great with steak or shrimp instead of chicken, or with different seeds and greens added for texture!

    Honey Mustard Rooster Salad.

    Substances For Marinade: 4 Chicken Breasts; 1/4 Cup Fresh Lemon Juice and Olive Oil, plus 1/3 of Garlic Minced for marinating (might need additional clove) as well as 1 Teaspoon of Celtic Sea Salt
    1 cup mayonnaise (I used Sir Kensington’s), or for egg-free option use egg-free mayo; or 3 tablespoons olive oil umplut 3 tablespoons uncooked honey (I actually used uncooked honey!), 3 tablespoons Dijon mustard and one tablespoon uncooked apple cider vinegar
    1 head pink or inexperienced leaf lettuce should be washed, patted dry, torn into bite-size pieces and torn as follows; 1 pint cherry tomatoes cut lengthwise should also be cut in half lengthwise before being cut lengthwise into halves to be reduced into bite-size items; two avocados should then be reduced further until bite size pieces remain; while 1/2 English cucumber should also be reduced into bite sized items for easy serving.
    1/4 Cup Pumpkin Seeds (Best When Soaked and Dehydrated or Sprouted) Directions
    Start by placing the chicken in an over-sized baking dish. In another bowl, whisk together lemon juice, olive oil, minced garlic cloves and sea salt before pouring onto it rooster. Marinate at room temperature for at least an hour for optimal results.
    Heat the grill pan over medium-low heat for two minutes before placing your chicken onto it to cook all of its way through (you could also grill outdoors if desired). Cool for 10 minutes then cut into bite-size portions.
    Combine mayo, olive oil, honey, Dijon mustard and apple cider vinegar in a blender until thoroughly mixed. You may have more dressing left than necessary for one salad so store any extra in an airtight Mason jar in your refrigerator to use later for other salads or as an dip for vegetables or rooster nuggets.
    Set out lettuce, cherry, tomatoes, avocado, cucumber, pumpkin seeds and the rooster in a big salad bowl before tossing with honey mustard dressing for an impressive salad presentation!
